Greek Easter Bread (Tsoureki)Recipe

Greek Easter Bread

Traditionally, this special sweet bread is served braided or round.
It includes one or several red-dyed, hard-boiled easter eggs that are
baked into the dough.

Usually, it is prepared on Good Friday and is made from easily
available ingredients.

Ingredients:
4 packages yeast
1 cup lukewarm water
1 cup warm milk
1/2 lb butter, melt and cool
4 lbs flour
5 eggs beaten
1/4 cup sugar
dash salt
1/2 teas ground masticha
dyed red eggs
1 egg, slightly beaten with fork
Sesame seeds

Preheat oven to 350 degrees.

Soften yeast in lukewarm water and stir in milk.  Blend butter with flour and stir in
eggs, sugar, salt and masticha.  Add yeast mixture and blend completely.  Turn the
mixture onto a floured board and knead for 10 minutes until dough is smooth.  Add
it to a greased bowl and cover.  Let it rise for about 2 hours in a warm place or
until doubled in size.  

Punch down dough and knead again until smooth.  Divide in half and form each
half into a loaf.  Place loaves in large floured pans and make 5 depressions in
each, 1 in the center, and the others in 4 opposite edges of the dough.  Place the
eggs in these depressions.  

Cover pans again and let rise till doubled in size, about 1 1/2 hours.

Use beaten egg to brush tops and sprinkle with sesame seeds.  Bake for about 45
minutes until bread is golden brown.

Makes 2 loaves.
