Sweet breads are a wonderful treat. Pureed fruit mixed with baking powder produces a thicker
batter and sweeter bread with a tender and moist interior. The fruit mixture must be fairly smooth in
order to incorporate easily with other ingredients. Ripe bananas, avocados and persimmons that
are peeled and mashed are an example of a fruit ingredient that can be pureed raw. Other fruits
such as apricots, pumpkins and apples which are firmer fruits must be cooked and then pureed.
The following is an example of preparing a sweet loaf of bread that contains fruit. When combining
these ingredients a basic order should be observed so not to beat or blend the flour which could cause
gluten to develop and make the flour tougher.
Sweet Fruit Bread Recipe
2 Cups All Purpose Flour
1 Tbs Baking Powder
8 Tbs (1 stick) Unsalted Butter
1/2 Cup Sugar
1 Egg
1/2 teas salt
1/2 teas freshly grated nutmeg
1 teas Good Quality Vanilla Extract or Vanilla Bean
2 Large Ripe Bananas
2/3 Cup Raisins tossed with 1 teas flour
1/4 Cup Coarsely chopped pecans (optional)
The order should be combining butter and sugar (flavored with a vanilla bean covered
in a jar for a few days; vanilla extract can also be used) first which should be beaten
until soft and creamy. You should allow about 30 minutes if you are doing it by hand or
about 12 minutes if you are using a mixer. Either method will expand the volume by
adding air within the mixture thus making the bread lighter and fluffier.
Next an egg is added to the combined mixture. Add a spoonful of pureed fruit with the
dry ingredients- flour, baking powder, salt and nutmeg which are all stirred in.
Combining in small amounts first will ensure that small lumps will not form. If you are
using nuts or dried fruit, they should be folded in at the very end just before the batter
is placed in the pan and baked. A flour based butter spray should used to coat the
inside of the loaf pan. Spread the batter evenly in the pan and bake in a preheated
oven at 350 degrees for about on hour or until completely done inside. You can test
whether the inside is baked completely by placing a toothpick in the middle of the loaf
and if after removing it, it is clean then remove the loaf from the oven. If not, bake for
10 more minutes then test again. Once the bread is done, remove and place on a wire
rack and let cool.
